  • 2 large onions
  • 5 stalks of celery
  • 9 red potatoes
  • 3 cloves of garlic
  • 1/2 fresh lemon (squeeezeee for juiceeee)
  • 32 oz of veggie broth
  • 32 oz of creamy potato leak broth (I used the Imagine brand)
  • 1 teaspoon oregano
  • 2 teaspoons thyme
  • 2 teaspoons fresh chives
  • 2 teaspoons pepper
  • 2 tablespoons of mustard (Dijon is best, spicy brown will do.)
