- 2 large onions
- 5 stalks of celery
- 9 red potatoes
- 3 cloves of garlic
- 1/2 fresh lemon (squeeezeee for juiceeee)
- 32 oz of veggie broth
- 32 oz of creamy potato leak broth (I used the Imagine brand)
- 1 teaspoon oregano
- 2 teaspoons thyme
- 2 teaspoons fresh chives
- 2 teaspoons pepper
- 2 tablespoons of mustard (Dijon is best, spicy brown will do.)
